Zhejiang Mein means ‘mixed well sauce noodle’ in Mandarin Chinese. It may not sound inspiring but it certainly inspired my friends when they tried it! This is a well-known Taiwanese noodle dish and again I am truly grateful to my mother for remembering this one among so many delightful recipes. You would never have a dish like this in a Chinese restaurant, which is why this dish is so special. It’s really simple: the trick is to let the sauce reduce to a few spoonfuls as all the flavors are
