Red beans, otherwise known as adzuki or azuki, are usually used in desserts in China because of their nutty sweet flavor. They are boiled, then sugar is added and blended into a paste which is used as a filling in moon cakes (eaten during the Autumn Moon Festival every year) and sweet rice flour dumplings.
