Lap-Cheong are Chinese dried sausages made from pork and pork fat with a savory-sweet aroma. They are usually served wok-fried with slices of fresh garlic but I found that roasted they take on a divine crusty edge and they release a lot of their fat, making them a tad healthier. For a vegetarian version of these bites, substitute cubes of sweet potato and roast them with the peppers and tomatoes.
