Chinese dried shiitake mushrooms are a must in any kitchen, in my opinion. They are fabulosly fragrant with a woody, earthy aroma. They need to be rehydrated – just immerse them in hot water and let them soak for about 20 minutes. This simple omelet recipe is perfect for brunch or as a shared appetizer or snack. For another East/West twist, the salad dressing fuses light soy, cider vinegar and olive oil.
