  1. Bring a large pot of water to a boil. Add the spinach, reduce the heat to medium, and simmer until cooked through, about 2 minutes. Strain the spinach and set aside to cool.
  2. In a small skillet, heat the peanuts over medium heat. Once the pan becomes hot, shake it frequently. When the peanuts just start to turn golden brown, immediately transfer them to a plate
