A good sweet-and-sour sauce is all about balance. This recipe uses a lot of aromatics to add fragrance, along with brown sugar and ketchup to boost the flavor. I like to use a mix of peppers to add color. If you prefer, you can toss in ½ cup (85 g) of chopped pineapple at the end for more texture and flavor.
