This very simple recipe uses Chinese chives (also known as garlic chives) to add a ton of flavor while creating a creamy scrambled-egg texture. I kept the ingredients minimal to let the chive flavor shine through. If you want more vibrant colors, add a handful of cherry tomatoes and chopped bell pepper to the scramble.
