This dish is one of my favorite toppings for rice or noodles, especially the Soy Sauce Noodles. The king oyster mushroom slices are charred until chewy and a bit crispy and then finished in a savory sauce that’s slightly sweet.

  • 2 large king oyster mushrooms (14 ounces, or 400 g, total)
  • 2 tablespoons light soy sauce
  • 2 tablespoo

  1. Cut the king oyster mushrooms in half lengthwise, then slice each half lengthwise into ¼-inch-thick (6 mm) pieces. Transfer to a large plate.
