This is a popular northern Chinese dish that I grew up eating, but it is mostly unknown outside of China. The corn kernels are cooked with pine nuts and carrots, creating a colorful bowl of goodies that is comforting to eat. Pine nuts are quite a luxury in China, so this is a dish we only order at restaurants for special occasions.

Ingredients

  • 1 teaspoon potato starch
  • ¼ cup (35 g) pine nuts

Method

  1. Make a slurry by combining the potato starch and 2 tablespoons of water together in a small bowl and whisking to dissolve the cornstarch.
  2. In a large skillet, heat the pine nuts over medium heat. Shake the pan and stir the pine nuts frequently to keep them from burning. When they start to turn golden brown, 1 to 2 minutes, reduce the heat to medium-low and cook
