This savory pudding of beef, oats, and suet was traditionally served early in the morning on Christmas Day in several counties in northern England.

It was boiled in a bag-like intestine or a pudding cloth, then sliced, fried in butter, and served to the male workers of the household. No one remembers the custom today, so we must rely on the literature of the time.
