Recipes for wine sauces are numerous from the fourteenth century onward, all of them quite similar. The differences are primarily the choice of spices and whether or not lemon or orange peel is added to the mix. Although these sauces traditionally accompany sweet dishes, such as plum pudding and figgy pudding, they are equally good with game, where sweetness is often a welcome addition.
