Although the French consider themselves the masters of sauce making, they don’t dare take credit for originating custard sauce, calling it crème anglaise. They do, however, nearly always flavor their custard sauce with vanilla, as do most British cooks today, which, while quite tasty, can be a bit boring. Older British recipes used a variety of spices, such as bay leaf, cinnamon, mace, and nutmeg, both alone and in combination, to create a more interesting result. If you don’t feel a
