  • ¼ cup (70 g) apricot jam
  • Selection of blanched almonds, walnuts, hazelnuts, and dried and candied fruits

Method

In a small saucepan, warm the jam over medium heat until fluid, then pass through a fine-mesh sieve into a bowl. Using a pastry brush, brush the warm jam over the top of the cake. Arrange the nuts and fruits on top in an attractive pattern, pressing gently so they adhere to the glaze.
