Salade De Fonds D’Artichauts

Salad of Globe Artichokes


  • 6 or 8 Globe artichokes, a mayonnaise dressing


Boil the artichokes in boiling salted water till the leaves can be easily removed. Drain thoroughly, by letting them stand for ½ an hour upside down on a dish. Remove the leaves and the choke, put the bottoms in a salad bowl, and dress with a thick mayonnaise dressing.
