This recipe is very old, very popular, simple, yet quite difficult to do “to a turn.” Brillat-Savarin has an amusing tale to tell about it. A perfect Fondue should be just and exactly sufficiently set to eat with a fork. Somehow it is considered wrong to eat it with a spoon.
