There are various kinds of gourd, pumpkins and marrows in Italy and there are innumerable ways of cooking them. In Naples, one of the favourite ways of preparing small marrows—young marrows, not more than 3 to 4 inches long—is to cut them in small pieces, fry them, pour a little vinegar over them and garnish with a few sprigs of mint.
