Method

In Milan, lettuce or other green salads are dressed with a mixture of 3 tablespoons of salad oil to of vinegar, 1 teaspoon of mustard, and 2 or 3 boned and pounded anchovies. The anchovies take the place of salt, and the mustard that of pepper.
