Soles Au Gratin à l’espagnole

Ingredients

  • 1 or more soles
  • 3 or 4 shallots
  • ½ lb of mushrooms
  • parsley
  • 1 glass of white wine
  • lemon juice, fine white breadcrumbs, oil, salt and pepper.

Method

Season the fish with salt, pepper and a squeeze of lemon juice. Put it in a fireproof dish with the chopped shallots, mushrooms and parsley and pour over it a little oil and the glass of white wine. Cover with breadcrumbs and bake in a moderate oven for 20 to 25 minutes, till the fish is tender. Garnish with croûtons of fried bread.
