Method

Proceed as in the last recipe, but instead of serving with artichokes and potatoes, chopped pimientos and aubergines are cooked and served with the chicken. This has chopped tomatoes instead of the tomato purée and is moistened with stock only and no wine. Garnish with ûtons of fried bread.
