The beans are broken in ½ inch lengths and boiled in salted water. When done they are thoroughly drained on a colander and, when cold, put in a salad bowl with a dressing composed of a few tablespoons of oil with which 1 or 2 cloves of garlic, pounded in a mortar, have been well mixed. Season with a little salt.
