  • 1 lb of thick dry salt cod
  • 2 eggs
  • 3 tablespoons of flour, salt, Parmesan cheese (optional), water.


Soak the cod for 12 hours in cold water, changing the water frequently. Put the cod in a saucepan, cover with cold water and bring to the boil. Simmer for a few minutes, remove from the water and drain thoroughly. Remove the bones, and cut the fish in 1-inch squares. Make a batter with the flour, the yolks of eggs and a little water, adding a good pinch of salt. Finally, add the whites of eggs, stiffly beaten. Dip the pieces of fish in this batter and fry in hot oil to a golden colour. Parmesan cheese is sometimes added to the batter.
