  • A few fillets of fresh herrings
  • 6 or 8 tablespoons of sour cream
  • a few boned anchovies, butter, brown breadcrumbs
  • Salt and pepper


The fillets of herrings are put in a buttered fireproof dish, with the sour cream, then sprinkled with breadcrumbs, well seasoned with salt and pepper, and garnished with anchovies (in oil) and a few pats of butter on the top. Put in a moderate oven and cook for 20 to 30 minutes, till the fish is quite tender.
