  • a few cooked potatoes
  • yolks of 1 or 2 eggs, a little milk, breadcrumbs, salt and pepper


Mash the potatoes, add a little milk and butter, and bind with the yolks of 1 or 2 eggs. Season with salt and pepper. Shape into small balls, roll in flour, then coat with yolk of egg and fine breadcrumbs. Either bake in the oven or fry in very hot fat.
