Ingredients

  • 2 lbs of apples, the whites of 2 or 3 eggs
  • 6 tablespoons

Method

Bake the apples till very soft, remove the peel and the core, and rub the pulp through a sieve. When quite cold, add this pulp gradually to the whites of eggs, beaten to a very stiff snow, to which the sugar and lemon juice have been added. Put on a glass dish and garnish with slices of fresh fruit and whipped cream.
