  • 1 pint of white wine
  • 1 pint of water (1 quart of cider may be used instead), macaroons
  • 1 tablespoon of sugar
  • 1 stick of cinnamon
  • 1 strip of lemon peel
  • 1 tablespoon of potato flour, the yolks of 2 eggs.


Put the wine and water or the cider in a saucepan with the cinnamon, lemon peel and sugar. Bring to the boil and add the potato flour and the yolks of egg, diluted with a little warm water, stir, and pour the soup over the macaroons, which have been placed in the soup tureen.
