Peel, core and quarter 1 lb. apples, and cut the quarters in half. Put 2 tablespoons of butter in a saucepan, with 6 ozs. of sugar, a little chopped lemon peel, 2 or 3 tablespoons of currants and a little grated cinnamon, and cook the slices of apple in this till quite tender, being careful not to cook them too soft or they will break. This is often used for open appletart.
