  • 2 or 3 lbs. of sauerkraut, a few slices of cooked meat or game, smoked pork, a few small fried sausages
  • 1 onion, a few Dutch cucumbers, pickled mushrooms, olives, butter. This dish is also made with fish.


Chop the onion and brown in butter. Add the sauerkraut and simmer gently till the cabbage is quite tender. Put a layer of cabbage either on a well buttered baking dish or in a fireproof dish, over it place a few slices of cooked meat or game or smoked pork, cover with more cabbage, dot with pats of butter and brown in the oven. Garnish with the Dutch cucumbers, the pickled mushrooms, olives, and the fried sausages.
