Baked Cucumbers


Take 12 pickling cucumbers, peel and steam them. Put them in a fireproof dish, cover with Béchamel or White sauce, sprinkle with grated Parmesan cheese and breadcrumbs, salt and pepper. Dot with pats of butter and put in the oven to brown. This is served as a hot hors-d’œuvre.
