  • 1 lb. and 6 oz. of potatoes
  • ½ pint , or a little more, of milk
  • 3 eggs
  • 2 tablespoons of butter, cinnamon and sugar.


Boil the potatoes, rub them through a sieve into a basin and mix with the milk, the yolks of eggs, grated cinnamon, sugar to taste, and the whites beaten to a stiff snow. Beat into a light batter, and cook in the same manner as very thin pancakes. They are sometimes made without sugar, and sprinkled with grated cheese.
