Although these fish cakes are made in more or less the same manner in all European countries, they are so popular in Holland and considered to be a national dish by Dutchmen that I think it advisable to include the Dutch recipe for them. They are made with 6 ozs. of cooked fish, 2 ozs. of bread, 1 egg, ½ pint of milk, ozs. of butter, chopped parsley, with a seasoning of salt, pepper and nutmeg. The fish is chopped and mixed with the other ingredients, shaped into rissoles and fried in butter.
