Method

Beetroot is extensively cultivated in Holland, and the sugar industry is one of the most important of the country.

Peel and slice 2 large cooked beetroot or 4 small ones, and put them in a saucepan with ozs. of butter, 1 shredded onion, 4 finely chopped sour apples, and season with salt and plentiful amount of nutmeg. Simmer till reduced to a pulp.
