Forcemeat Ball Curries

Method

The following ingredients should be used for 2 lbs. of meat or fish: 3 to 4 ozs. of either lard, butter or mustard oil, 5 to 6 ozs. of stock or water, 1 oz. of ground onions, ¼ tablespoon of ground chillies, the same of turmeric, ¼ a teaspoon of ground green ginger, the same of ground peppercorns, ¼ teaspoon of ground garlic, 1 dessertspoon of mixed herbs, 1 dessertspoon of salt, 3 tablespoons of fine breadcrumbs, 1 egg.

These Kofta curries can be made with chicken, beef, pork, lamb, fish, crabs or prawns (see following recipes).
