Method

One of their popular soups, more suitable to winter than summer, is the Minestrònis.

This consists of beans, chick peas, broad beans, either fresh or dried, according to the time of year, cabbage, potatoes and fennel, with pigs’ feet and ears, highly seasoned, and simmered for several hours.
