Method

Much use is made of saffron, and Sardinian saffron is particularly fragrant and of a fine quality. Their special small gnocchi, made of fine ground wheat, the Malloreddus, are often flavoured with saffron, poached in boiling salted water, and served with a tomato sauce, or with gravy and cheese made from ewe’s milk.
