Method

They have a peculiar way of making their Polenta. The polenta flour is stirred into the boiling water in the usual way, but chopped garlic, onion, tomato, parsley, sweet basil, are added to it, with chopped salt pork, small pieces of sausages, and grated cheese. All this is well stirred and mixed, and is either eaten hot with a spoon, or cold, cut in slices.
