La Favata

A Dish of Pork Sausages, etc

Method

On the Thursday of Shrovetide, La Favata, a dish typical of the Gocéano and Barbagia, is prepared. This is made with pieces of salt pork, cut in large chunks, a ham bone, special home-made sausages, a handful of dried beans, wild fennel and other herbs, and a little water. It is simmered till the meat is tender.
