Coconut Cakes are among the many very pleasing sweetmeats. Break the coconut and keep the milk. Grate the coconut finely, mix with the milk, and put in a saucepan with a ½ lb. of sugar. Stir and bring to the boil, and when the mixture thickens and begins to turn slightly yellow, pour it on a buttered marble or dish, divide into squares, and let stand till cold.
