Tomates Farcies au Riz. Fry a little chopped onion to a light brown in butter. Add the washed rice, and mix thoroughly with the onion and butter. Then moisten with stock and cook for about 20 minutes till the rice is tender. Add grated Parmesan cheese, a little more butter, season with salt, pepper and chilli peppers, and stuff the tomatoes with the mixture. Sprinkle each tomato with a little grated cheese, pour melted butter over them and put in a moderate oven for 20 to 25 minutes.
