Gateau de Patates au Coco. Boil about 2 lbs. of sweet potatoes till quite soft and rub them through a sieve. Mix with the juice which is extracted from a grated coconut by putting it in a cloth and squeezing it, a little sugar and butter, and three whole eggs well beaten. Flavour with a small glass of anisette, put the mixture in a well-buttered cake tin and bake till a light brown.
