Method

Sang Gris is another popular drink, but very alcoholic. It is made with Madeira, flavoured with pounded cloves, cinnamon, lemon juice, sugar, nutmeg, a small piece of crust from toast, which must all be put in a jug or a glass bowl and left to stand for several hours. It is then strained through a cloth and served iced.
