Ingredients: 3 eggs, beaten; 225 g fresh breadcrumbs; 1 tbsp sherry; 1 tbsp rum; 150 ml water; 25 ml brandy; 175 g demerara sugar; 150 g vegetable suet; 225 g currants; 225 g sultanas; Grated rind and juice ½ lemon; Pinch of salt; 150 ml beer; Grated rind and juice ½ orange; 1 small cooking apple, peeled, cored and grated; 225 g raisins; 1 level tsp ground ginger; 1 level tsp ground mixed spice

Method

Preparation

Place all the ingredients together in a large mixing bowl, except the eggs and the breadcrumbs. Mix really well. Cover and leave to stand for 3 - 4 days, stirring occasionally. When ready to cook stir in the beaten eggs and the breadcrumbs. Mix really well. Spoon into one large 2 litre pudding basin or two 1 litre basins. Cover with either a fitting lid or a layer of greas
