Rich fruit cake

• 225 g butter, softened
• 250 g soft brown sugar
• 5 egg

Preparation

Line and grease 20.5cm square or 23cm round loose bottomed cake tin.

Place the butter and sugar in a large mixing bowl and beat until light and fluffy. Add the eggs a little at a time, beating well after each addition. If the mixture begins to curdle add a little of the flour and then continue adding the egg. Add the remaining flour and fold into the mixture. Add a
