It is hard to get good kippers nowadays - not for want of smokers, but for want of herrings. Stocks are depleted and the fish are much smaller than they used to be. Herrings were first kippered in 1861 at Craister in Northumberland and it was recorded, ‘Today we smoked herrings as salmon is smoked in Scotland’.
