This is an adaptation of a dish by that very good Indian cook Anjum Anand, whose first series was the only cookery programme I watched in 2007. She chooses to describe herself as a chef but I would pay her the compliment of calling her a cook.

If you fish for mackerel - which is really the only way to eat them - you usually have a lot and this is a very good way of using them.
