Conger eel is a much-ignored fish, except among the West Indian community. I love its texture and meaty flavour. When we were filming ‘Clarissa and the Countryman’, Tug, Johnny’s terrier, caught a conger eel and we barbecued it - and very good it was, too. I also put eel in fish pies, for variation. Tins West Country dish uses cider to cut the possible glutinous liquid.
