This is a dish I ate one Sunday at my beloved Valvona and Crolla. Now, you may if you wish cook, bone and stuff your pigs’ trotters, and I will be the first to encourage you; however, the Italians produce a very good stuffed trotter or zampone, which takes all the hassle out of this dish.
