Tins is a dish my mother used to make once my father had left, and we no longer had servants. My mother only knew about five dishes, having never cooked, and this was one of them. I loved it then and I do now.

Ingredients

  • 225 g butter
  • 1 chicken, jointed and skinned
  • 2 teaspoons

Method

Preheat the oven to 160°C/325°F/gas mark 3.

Heat half the butter in a pan and brown the chicken pieces. Transfer to an ovenproof dish. Mix together all the remaining ingredients, except the breadcrumbs and remaining butter, and pour over the chicken. Lay the breadcrumbs on top
