In good Italian and French delis you can buy little jars of truffled sausages. They aren’t cheap but a little goes a very long way and gosh, are they good and comforting. They go well with eggs but they also taste good with partridge. I love partridge, especially the English native grey-leg; for red-legs you have to try a little harder and this dish does very well.
