This combination of ham with cheese and chicory is one of my favourites. It is total comfort food to me and, living alone, I get the dish to scrape...
Remove the cores of the chicory; Put the chicory into salted boiling water and cook for 5 minutes. Drain well.
Heat the white sauce and melt two-thirds of the cheese into it. Stir in the mustard powder and cayenne.
