What does the rhyme say? ‘Pease pudding hot, pease pudding cold, pease pudding in the pot, nine days old.’ Oh, I love pease pudding. In Durham it is still sold commercially and spread on ‘stottie bread’ (bread cooked in the bottom of the oven) or good ham with the fat on. Whenever I cook a ham or a piece of pickled pork, I add a clothful of peas to cook with it. I also freeze my ham stock so I can cook peas in it at a later date.
